Grape variety: 70% Roussanne, 20% Viognier, 10% Bourboulenc
Vine-growing: In compliance with HEV specifications, trellised vines, light ploughing of the land and mechanical hoeing. Natural weeding; no pesticides or herbicides. 2-eye pruning for a yield limited to around 40 hL/ha (50 hL authorised); careful disbudding and mechanical harvesting.

Cellar

Vinification: Harvested at night when fully ripe, de-stemmed; lightly crushed; free-run juice then lightly pneumatically pressed and inerted with gas to ensure good extraction of aromas without oxidation; static cold settling; temperature-controlled fermentation.
Bottling: bottled by us at the estate.
Limited edition: available in 75 cl.
