Tasting

A zinzolin red color with garnet highlights and a powerful nose of black fruit and kirsch. Bewitching aromas of raspberry, fig and terracotta. A symphony of aromas makes this sweet wine generous and intense.
Side: A perfect accompaniment to tajines, wild boar in chocolate sauce, cheese and chocolate desserts.
Service: 15 - 17 °C (59°-62°F)

Area: 3 hectares
Age of the vines: 50-60 years old
Altitude: 200 m
Soil: clay-limestone
Proof: 17.5%
Grape variety: 50% Caladoc, 30% Grenache, 20% Cinsault
Vine-growing: In compliance with HVE specifications, trellised vines, light ploughing and mechanical hoeing. Natural weeding; no pesticides or herbicides. 2-eye pruning for a yield limited to around 30 hl/ha (50 hl authorized); careful disbudding and Hand-picked.

Cellar

Vinification: Hand-picked at full maturity in mid-October, whole grapes vatted, fermented and aged in 100% terracotta amphora.
Bottling: bottled by us at the estate.
Limited edition: available in 75 cl (25.36 fl. oz.).
